Green tomato Mincemeat filling

Sweet, spicy, juicy, a touch tart. Use 4 cups in a whole wheat pie crust for a delicious treat. This will debut at Thanksgiving 2005. Cant wait!

Ingredients

  • 5 lbs finely chopped green tomatoes
  • 4 cups finely chopped peeled tart apples
  • 1 ¾ cup raisens
  • 1 ¼ cup packed brown sugar
  • 1 cup sugar
  • 1/3 cup vinegar (we used apple cider)
  • ¼ cup (or more) lemon juice
  • 2 tbsp minced lemon peel
  • 2 tsp cinnamon
  • 1 tsp salt
  • ½ tsp allspice
  • ½ tsp cloves
  • ½ tsp ground ginger
  • 1 cup water (if needed)

Instructions

Place all ingredients into a large dutch oven. Add some water if needed. I think we ended up using only about ½ cup.
Bring to boil.
Reduce heat and simmer until thickened or desired consistancy is reached.
You can pack into hot jars and process for 25 minutes in a boiling water bath. Or you can toss in a tuperware and throw it in the freezer.
