Vegetable Tortellini Soup

From the kitchen of Grandma.

Ingredients

  • 1 LG onion
  • 2 cloves of garlic
  • 1 tbl. olive oil
  • 3 cans (14 oz) Beef broth
  • 1 can (15 oz) stewed tomatoes
  • ½ to ¾ cup taco sauce
  • 1 tsp basil
  • 1 PCK (7 oz) tortellini
  • 1 Green pepper, diced
  • parm cheese

Instructions

Cook onion and garlic in olive oil.
Add broth, tomatoes, taco sauce and basil.
Bring to boil.
Stir in tortellini, simmer for 15 minutes.
Stir in green pepper.
Simmer for 3-4 minutes.
Sprinkle with cheese.
