Quick Dilly Pickles

From the kitchen of Amber.

Quick, refrigerator pickles. Good for about 2 days if they last that long.


  • 2 large Cucumbers (or a few small) , thinly sliced on mandolin
  • ½ red onion, thinly sliced on mandolin
  • salt
  • fresh ground black pepper
  • 2 tsp sugar (I used xylitol)
  • ½ cup balsamic vinegar
  • 2 tbsp dill weed


Mix vinegar, salt, pepper, sugar and dill weed in small bowl. Pour over cucumbers and onion. Let marinate in the fridge for a few hours before chilling.
