Pickled Eggs

From the kitchen of Gary’s Kitchen.

Christmas Pickled Eggs


  • 2 tbsps. sugar
  • 1 tsp. salt
  • 2 cups cider vinegar
  • 1 tsp. mixed spice (pickling spice)
  • 3 drops red or green food coloring
  • 12 to 16 hard cooked eggs
  • 1 lb hot dogs and or kailbasa (optional)


add sugar, salt and spices to vinegar (dilute 1/3 with water if strong)
simmer about 8 minutes
pour over eggs in quart jar
add food coloring
seal and let stand for 2 days before using
add dill, a few caraway seeds, a slice of garlic, a clove or onion to brine as desired (all optional)
